Huevos Ranchero with Veggie Bacon and Chipotle Toast



Yum Yum!

I figured I'd start off our first adventure with one of my all time favorites. Huevos Ranchero are a staple in my diet. My girlfriend and I eat them about twice a week. They are simple, delicious and made with cheap ingredients! I make mine similar to scrambled eggs, trust me, they're awesome!

Vegetarian
Serves Two or Three

Ingredients:
Six Large Eggs
1/2 Can Black Beans
2 Tablespoons Salsa
1 Handful Shredded Cheddar or Mexican Cheese
1 Flour Tortilla
Adobo Seasoning and Crushed Red Pepper to flavor
1 Box Morning Star Veggie Bacon
2-4 Pieces Bread (Any Kind)
1 Tablespoon Sabra Chipotle Hummus

Prep:

Begin cooking the eggs in a standard scrambled eggs fashion. When mixing them up, I like to add a little milk, a few dashes of Adobo and a few dashes of Crushed Red Pepper (I love these spices, so if they're not for you, try adding your own). Grease the pan and begin scrambling the eggs.

When the eggs are almost fully cooked, but still a bit runny, add the black beans, salsa and tortillas. Make sure to break up the tortillas into small pieces before you throw them in the mix. Stir it all together and continue cooking until eggs are finished. Now, time for the cheese. I LOVE CHEESE. Add as much as your little lesbian heart desires. I always tend to think you can never have too much cheese! As the cheese melts, plate and serve! Simple, right?! I know, and trust me, these eggs are AWESOME!

Now, for the veggie bacon...



I prefer Morning Star Veggie Bacon. You can get it pretty cheap at Trader Joe's if you're on a budget like I am. Just throw a little oil in the skillet, wait for it to get hot on medium heat, and toss in as many strips of veggie bacon as you'd like. Just flip, cook and serve! Yum!

And finally, the toast...

I really love potato bread, but rye or wheat will work just fine. Toast it to your liking. Now, if you're feeling adventurous, try spreading a thin layer of Sabra Chipotle Hummus on top. Okay, what I said about cheese before goes DOUBLE for hummus. I LOVE HUMMUS, as I'm sure you will learn in future entries. This stuff is great, and you can put it on almost anything.
